What is better Sabertooth or Direwolf?

Personally unless you got 150-200+ armor saddles for the sabers, i would go with wolves. The direwolf is like a glass arrow, dangerous, yet weak. Sabertooth can fall pretty far without taking damage, and harvest good amounts of chitin and keratin. Direwolves are a good choice as a compact and deadly force though.

Thylacoleo are much better all round mounts than either a direwolf or a saber. Same base damage as a direwolf (so better than a saber). Better base health than either (same as a spino, better than a bear). Access to saddles so much tankier than a direwolf, and tankier than a saber by having more health.

Can a Wyvern carry a Thylacoleo?

As with other medium-sized creatures, using a Crystal Wyvern, Quetzal, or Wyvern to carry it, or using a fast mount to kite inside into a pen made out of materials it cannot damage and then firing tranquilizers at it from windows or a high platform is also viable.
