Minas Ithil was designed to guard the vale and pass so that evil things could not re-enter Mordor. Then they assailed Minas Ithil from inside Mordor. Even if Gondor could retake the city, they could not retake the pass.
Why did Minas Morgul light up?
What was the purpose of this? Such an evil display of power. Iirc, it was a response to a similar beacon at barad-dur, basically Sauron letting the Witchking know to go ahead with the attack against Osgiliath/Minas Tirith. The witckking was just letting Sauron know that he understood and was going ahead with the plan.

Could Saruman have defeated the Balrog?
We know that the Nazgul are formidable when gathered together, so much as Gandalf had to flee from them, this same Gandalf that went on to destroy the Balrog. Therefore it’s entirely possible that Saruman could’ve defeated the Balrog, whether he would survive is another matter.
