The broken armor only appears if you use a weapon with the skill Armor Strike on it and you manage to critical hit the enemy. The same can happen to your character if they manage to send you flying. If you don’t have the any weapons with the skills, you can find them on the Hero Challenge history map.

Just use an AoE Gambit. E.g. fire barrels, resonant lightning, Arrow barrage, etc. Weak armors like Birds and Wolves you can break all 4 if you do 20 damage or so and you immediately get the Ore reward. For stronger enemies you might need at least two units with area of effect Gambits.
