Is one case fan enough?
You need at least two fans (1 intake, 1 outtake) in your case. However since you mentioned your gpu uses a blower style cooler, you don’t need to worry about it as much compared to the standard aftermarket design. If your goal is to keep your pizza warm, then yes one is enough.
Is two 120mm fans enough?
Yes it will be perfectly fine. Just make sure you have one as exhaust near the back by the CPU cooler, and the other as intake below the graphics card. Adding any more fans will only slightly boost your performance.

I’d say the odds are about 0.5% if not lower that it’ll leak. They are pretty safe, and if they do leak Corsair will help compensate for whatever damages occur.
