To unlock motorcycles, aka “bikes”, you have to find and enter every single car show/dealership (NOT the Car rental places though). Once you have done this, all bike dealerships will be open. Alternativly, to get a bike without unlocking the dealerships, just simply go to your house, and buy one over Xbox Live form another player.
