Does Omnath keep mana between turns?
Yes. Every turn of a Magic game is divided into phases (C.R. 500.1), so if you control Omnath, you don’t lose unspent green mana as turns end (including as the ending phase of a turn ends).
Does Mana disappear after upkeep?
While it no longer causes mana burn, mana is still emptied from your pool. In fact, it now empties at the end of every step and phase, and not just at the end of each phase. This means that you can no longer generate mana in the upkeep step and then spend it in your draw step.

Yes, summoning sickness only applies to attacking, tap abilities and untap abilities. any other activated abilities are fine.
Can you activate creature abilities as an instant?
Anytime you could cast an Instant. There is nothing inherently different between an activated ability with the tap symbol in its cost and other activated abilities and their costs. Tapping is a cost, and just like any other cost, it must be paid before activating an ability.

An artifact is either tapped or untapped. An untapped artifact is a resource that can be used, as long as you have a card that says it can use it. An artifact with an activated ability that uses the tap symbol can use its own “untapped-ness”.
