Upgrade the watering can on a day when the weather forecast for the next day is for rain.
Upgrade it on Spring 27, Fall 27 or Winter 27.
Upgrade it on any day in the Winter (except Winter 28) if you’re not growing one of the few crops, all Winter forage, that can grow then.

How do you upgrade a watering can without dying plants?

Simply turn in your watering can on the 27th to be upgraded, AFTER you’ve already watered your crops for that day. On the 28th you can harvest what growth remains and since your season will change the next day there is no need to have your watering can.
