Who can use Cantrips?
Any character that can cast from level one will have access to cantrips (those being Artificers, Bards, Clerics, Druids, Rangers, Sorcerers, Warlocks, and Wizards… so a fair chunk of the playable classes). Some cantrips are class specific, like Thaumaturgy (a Cleric cantrip).
How do I get more Cantrips?
Cantrips: You get the number on your class sheet and that’s it – you can’t change them by the book. Most DM’s will rule on level up you can swap them out. As for gaining additional ones, by book, I believe Magic Initiate (a feat) is the only way to get more.

Do spells automatically hit?
You are correct. Spells do what they say they do, with no assumptions. Yeah, if there are no saving throws or spell attack rolls, it automatically hits. The sleep spell works similarly, too – it automatically “hits” until all of the HP that you rolled is depleted.
Do you have to roll to hit for magic missile?
Yes. There is an old saying in D&D “Magic Missile Never Misses.” The idea, basically, is that it’s a small amount of damage (per missile) that always hits it’s target. The tipoff here is that it does not mention an attack roll or saving throw.

Does Magic Missile trigger hex?
A magic missile is not an attack, so you get no extra damage from hex. So Magic Missile since it doesn’t have an attack roll or even mention you are making an attack with it in the spell text then it will not trigger hex damage.

The Hex spell increases the damage when you hit with an attack and Eldritch Blast is a spell which causes you to make a spell attack roll.
