No, the end is finite like any other dimension. Granted, the limit is huge and you’ll probably never run out of places to explore, but it is still finite. Also, respawning the Ender Dragon will not reset any other part of the end dimension.

No, the end is not endless. As stated in the Official Minecraft Wiki: Its default size and location remain the same across all three dimensions. Meaning that the world border in the end will also be the same as in the overworld, so around 30 million blocks away (from 0,0).

Once you get one Elytra it’s pretty easy to grab a stack of fire works and fly around looking for more. You can always build a bridge to an end city far off in the distance. It’s just more boring than killing the dragon twice to get a new portal.
