How is 2E different from 5E?
1e and 2e were mainly different in that 2e cleaned up the super arcane parts of the rules (to-hit tables) but also cut the super arcane parts of the fluff (most of the DMG, including random harlot tables). And 5e has some net new stuff not from any previous editions, like the indie-game inspiration and bonds and stuff.

How to convert ad & d 2e XP to 5e?

The best way to do this is to use the rules for determining CR in the DMG, but if you’re pressed for time, you can just compare it to similar 5E creatures once again.
Can a 2e Dragon be converted to a 5e Dragon?
Oozes should probably keep their current hit dice. Dragons have been upgraded a lot since 2E, so any 2E dragon converted like other monsters is likely to be comparatively weak. But since we have only one example, I can only suggest you convert them like other creatures of their size.
